Cold pressing of oil: The cold pressing method is to send the oil directly to the oil press for pressing without going through high temperature or low temperature, usually at a temperature below 60 degrees Celsius.

Oil hot pressing: In the hot pressing method, the oil is usually cleaned and crushed before the oil is pressed, and then heated at a high temperature, which will cause the destruction of the oil cells, promote the denaturation of the protein, and reduce the viscosity of the oil, so as to achieve the purpose of pressing.

Both cold-pressed oil and hot-pressed oil are physical pressing methods. The differences between the two are as follows:

1. Different extraction process

Due to the particularity of cold-pressed oil, special hydraulic oil presses are often used for pressing.

Hot oil presses are usually screw presses. Before hot pressing oil, the oil should be cleaned, crushed and then heated at high temperature, and then extracted.

However, cold-pressed oil has a shorter shelf life and must be eaten as soon as possible, not stored for too long.

2. Different oil yield

The oil yield of cold-pressed oil is relatively low, generally only about 50% of that of hot-pressed oil;

Hot pressing of oil is to destroy oil cells and reduce oil viscosity, so as to be suitable for oil extraction and improve oil yield, with less residue and high yield.

Therefore, the price of cold-pressed oil is usually double that of hot-pressed oil.

3. Different appearance

Cold-pressed oil retains the natural flavor and color of the oil, generally showing a clear and natural color;

Hot pressed oil has damaged oil cells and looks darker in color.

4. Different cooking tastes

Cold-pressed oil has a good color and is relatively light, but the oil smell is not fragrant and does not get angry. Cold-pressed oil will not foam when eaten, and will not stagnate in the pot.

Hot pressed oil tastes better and has a darker color. And when it is not processed, the frying pan will foam when it is fried, which needs to be filtered by a centrifugal oil filter.

5. Nutrient content is different

The cold-pressed refined oil maintains the natural fragrance and color of the oil, so that the various physiologically active components in the oil can be completely preserved, and the denaturation of the protein is small, which is conducive to improving the comprehensive utilization of the protein.

High-temperature oil extraction will lead to a large loss of various biologically active substances such as vitamin E, sterols, and carotenoids in the oil during the pressing process, resulting in a waste of resources.

Common hot-pressed oils include peanut oil, sesame oil, etc., and cold-pressed oils include linseed oil, walnut oil, etc. In order to fully absorb nutrients and meet various cooking needs, it is recommended to buy a variety of edible oil tankers.
